Fly By Diner will enter a "no fly zone" after this week for the winter months, so we can focus on the demands of the holiday catering season. While we won't be mobile, we will continue to create seasonally inspired healthy eats and plan to hit the road again in the spring. This week's menu is an internationally-inspired celebration of fall flavors and favorites. The weather forecast looks great, and we hope to see you at New Belgium Brewery on Thursday, November 18 from 11:00am to 1:30pm. We're just outside the employee parking lot on Buckingham Street, just east of Linden.



  • Winter Squash, Red Lentil, and Chickpea Stew- Topped with optional yogurt, cilantro, and peanuts (vegetarian and gluten free). $5.00 12oz

Fly By Diner is now wondering about being careful about what you wish for. Winter has made an appearance, and we're already thinking about spring- actually, just more daylight. This week's menu is all about keeping warm and cozy inside and out. You'll find us on Thursday at New Belgium from 11:00am to 1:30pm. We're located just off Buckingham, outside the employee parking lot.



  • Uptown Italian Sausage- Served on a roll with roasted red peppers, arugula, and extra virgin olive oil. Served with natural chips or a tangerine. $8.00

Fly By Diner is thrilled to premier our new location this week. We'll be serving lunch at Jax Mercantile Ranch & Home in Loveland (950 E. Eisenhower Blvd.) every Wednesday. You'll find us in the NE corner of the parking lot next to N. Redwood Drive from 11:00am to 1:30pm. We're still happily at New Belgium Brewery every Thursday at the same time. We're located off of Buckingham, just outside the employee parking lot. This week's menu celebrates the flavors of France- with the usual Fly By Diner "spin" on the traditional. Bon Appetite!



  • French Club- Brie, bacon (or not, for a vegetarian version), lettuce, and tomato, and a touch of walnut pesto on multigrain bread. Served with natural chips or a tangerine. $8.50

This week's Fly By Diner menu has FALL written all over it! The farmer's markets are winding down, and what remains of local produce is a mix of beautiful oranges, yellows, and a bit of green. We are excited to be adding a new location to our weekly line-up. We'll be serving lunch at Jax in Loveland on Wednesdays starting next week from 11:00am to 1:30pm. If you haven't seen their new store, come check it out. It is beautiful, and you can enjoy lunch from Fly By Diner on the east side of the parking lot while you are there. You'll still find us on Thursdays at New Belgium from 11:00am to 1:30pm, just outside the employee parking lot on Buckingham Street. And, just in time for Halloween, Thursday is National Chocolate Day, so put aside all of the candy you have purchased for the little tricksters, and enjoy the "real deal" for dessert.

After a week-long catering of "big food" for hungry guys, Fly By Diner is craving a large dose of colorful vegetables this week. Our warm weather has kept the local farmer's markets stocked with lovely produce, and this week's menu takes advantage of local, and not so local, (avocados- a personal favorite) fare. Please join us at New Belgium Brewery on Thursday from 11:00am to 1:30pm. We're located just off of Buckingham Road, east of the brewery, at the entrance to the employee parking lot.

Today, Fly By Diner participated in the health fair at New Belgium Brewery, where the diner is launching "Project Classy Vending," providing creative and healthy vending food options for New Belgium employees. Wouldn't it be wonderful if all companies were that committed to do something this cool? Speaking of cool, the cooler weather is making us think of comfort foods this week. Fly By Diner is recovering from a very busy and totally fun weekend. We catered the Green Room (with a lot of help from special friends) for the Bohemian Foundation- that meant preparing three fresh and tasty meals for 850 Bohemian Nights band members, their families, and other special guests. We hope that our local friends had the opportunity to go downtown and participate in this year's New West Fest and Bohemian Nights music and arts festival.

This week's menu celebrates the peak of Colorado's summer produce. Fresh corn, roasted chiles, summer squash, heirloom tomatoes, and more, in a hodgepodge of flavors. Look for us at Advanced Energy on Wednesday (off of Midpoint drive) and at New Belgium Brewery on Thursday (off of Buckingham), from 11:30am to 1:30pm. We're also providing some great eats at New Belgium on Thursday night during their annual bike-in movie night. It is THE place to be on Thursday nights.


  • Santa Fe Wraps- With or without chicken (black beans for vegetarians), goat cheese spread, freshly roasted green chilies, corn and choice of lettuce, tomato and onion. Served with corn chips or a Palisade peach. $8.00

Fly By Diner is going Greek this week! Jan and Sarah are so excited by the abundance of local produce, and we thought it fitting to showcase it with a "build your own" pita sandwich and some lovely salads. The weather is hot, hot, hot, so we are keeping the oven off, and creating some great veggie loaded lunches with a little grilled steak and chicken.

Fly By Diner will NOT be landing next week, August 4th and 5th. We are committed to some very large catering events and are unable to come to Advanced Energy or New Belgium. Please be sure to come get your fill this week, and note we will be returning to our regular schedule August 11th and 12th.

Fly By Diner had a great time at the Farmer's Market on Saturday. The Courthouse parking lot on Oak Street was full of local vendors and artisans displaying the best of their early season wares and produce. We served up fresh local French press coffee, fresh roasted at The Bean Cycle, fried egg sandwiches made to order on local organic ciabatta bread, and several cooling beverages- smoothies, agua frescas, sport tea, etc. Come join us most Saturdays at the market. It is truly a happening place!

This week's menu brings back one of our most popular sandwiches and some new flavors. All freshly prepared and guaranteed to help you beat the heat. We'll also return to the Larimer Farmer's Market on Saturday at the Courthouse to serve breakfast, fresh smoothies, and other delights.
